kevinveenbirkenbachandClaude Opus 4.7 fa4eea5a86 refactor(deployment-mode): SPOT-define DEPLOYMENT_MODE in group_vars

Replace the host-scoped set_fact resolvers in sys-svc-compose/tasks/01_core.yml
and tasks/stages/01_constructor.yml with a single group_vars definition driven
by group_names. Uppercase the variable to match the SPOT convention and drop
every `| default('compose')` fallback now that the resolution is unconditional.

Role-var opt-out on a swarm host still works via Ansible's role-vars > group_vars
precedence.
