feat(services): add CPU/RAM/PIDs defaults for heavy roles and align service names

Add per-service resource overrides (cpus, mem_reservation, mem_limit, pids_limit) for ollama, mariadb, postgres, confluence, gitlab, jira, keycloak, nextcloud; light formatting fixes in wordpress.
Rename service keys from generic 'application/web' to concrete names (jira, confluence, gitlab, keycloak) and update compose templates accordingly.
Jira: introduce JIRA_STORAGE_PATH and switch mounts/README accordingly.

- Add explicit 'aliases: []' everywhere (no implicit aliases)
- Standardize canonical subdomains for consistency:

* Gitea: tea.git.<PRIMARY_DOMAIN>
* GitLab: lab.git.<PRIMARY_DOMAIN>
* Joomla: joomla.cms.<PRIMARY_DOMAIN>
* Magento: magento.shop.<PRIMARY_DOMAIN>
* OpenProject: open.project.<PRIMARY_DOMAIN>
* Pretix: ticket.shop.<PRIMARY_DOMAIN>
* Taiga: kanban.project.<PRIMARY_DOMAIN>
- Remove legacy/duplicate aliases and use empty list instead
- Fix 'alias' -> 'aliases' where applicable

refactor(web-app-gitlab): restructure configuration and add OIDC support

- Added oidc feature flag in config
- Removed obsolete credentials schema (initial_root_password)
- Updated docker-compose.yml.j2 to use explicit GITLAB_* vars (image, version, container, volumes)
- Moved initial_root_password into vars/main.yml
- Introduced GITLAB_OMNIBUS_BASE and GITLAB_OMNIBUS_OIDC config lists
- Switched env.j2 to use GITLAB_OMNIBUS_ALL join
